Annotatsiya

Bakterial fermentlar — mikroorganizmlarning biologik faol moddalari bo‘lib, ular turli biokimyoviy reaksiyalarni tezlashtirish xususiyatiga ega. Ular qishloq xo‘jaligi, oziq-ovqat sanoati, farmatsevtika va biotexnologiyada keng qo‘llaniladi. Bakterial fermentlarni aniqlash va ularning xususiyatlarini laborator sharoitda o‘rganish — mikrobiologiya, biokimyo va biotexnologiya sohalarida dolzarb ilmiy muammo hisoblanadi. Ekzofermentlar bakteriya hujayrasidan tashqi muhitga chiqarilib, u yerda turli moddalarni parchalaydi. Ba’zi ekzofermentlar bakteriyalarning oziqlanishi bilan bog‘liq, chunki ular oziq moddalarini mikrob hujayrasi tomonidan so‘rilishi mumkin bo‘lgan shaklga aylantiradi. Endofermentlar hujayra ichidagi oziq moddalarining parchalanishi va hujayraning tarkibiy qismlariga aylanishida ishtirok etadi.
